Banana Italian Ice

  • 4 cups bananas
  • 1 cup sugar
  • 3/4 cup water
  • 1/3 cup juice (any variety)
  • 2 tbsp. lemon juice
  • 1 tsp. vanilla extract

In a saucepan, bring the water and sugar to a boil.  Boil for 5 minutes.  Remove from heat and cool slightly.  Add all juices and vanilla extract.  Place the liquid and bananas in a blender.  Blend until smooth and place in sealable bowl or container.  Freeze.

After 2 – 3 hours, remove from freezer.  Stir or place back in the blender, to mix.  Return to container and freeze another 3 – 4 hours.  To serve, scrape spoon over top of the ice to shave.
